Let’s face it – when you hear the word “steak”, what automatically comes to mind is an expensive, fancy meal. But you don’t have to break the bank to be able to enjoy a nice, juicy piece of grilled steak – there are many cheaper cuts of meat you can use that will be as delicious fresh off your grill. It all comes down to how you prepare and cook it, and of course, what you pair it with.Sometimes, it’s also the ambiance that makes a meal enjoyable and fancy, so take that into consideration as well!

Garlic Butter Grilled Chuck Steak

What you need:

  • 4 boneless chuck or chuck eye steaks

For the marinade

  • 4 cloves garlic, minced
  • 5 tablespoons red wine vinegar
  • 4 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon brown sugar
  • 1/4 teaspoon red pepper flakes
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

For the Garlic Butter Compound

  • 2 cloves garlic, minced
  • 1 stick unsalted butter
  • 1 tablespoon fresh thyme
  • 1 tablespoon fresh rosemary

To make the marinade, combine 4 cloves garlic, red wine vinegar, olive oil, Italian seasoning, brown sugar and red pepper flakes, salt and pepper in a medium bowl. Using a whisk, stir ingredients together until well-combined. Place steaks in a large Ziploc bag and pour marinade into the bag. Shake to coat meat with marinade. Refrigerate for at least 24 hours.

Meanwhile, mix together 2 cloves garlic, butter, thyme and rosemary in a bowl. Transfer mixture to a piece of plastic wrap. Seal the ends and refrigerate to harden.

When steaks are ready, remove from marinade and cook on a pre-heated grill over medium-high heat for 3-4 mins per side, depending on the doneness you prefer. Once cooked, transfer to a serving plate and top each with a pat of your compound butter. Allow the butter to melt before cutting and serving.

Simple Herbed Flat Iron Steak

What you need:

  • 3/4 kg. flat iron steak
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 2 tablespoons red wine vinegar
  • 1 tablespoon cracked black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon dried rosemary leaves, crumbled
  • 1/4 teaspoon kosher salt

Using a whisk, stir together olive oil, garlic, red wine vinegar, black pepper, oregano, rosemary and kosher salt in a medium bowl. Place steaks in the bowl and coat with marinade. Seal the top of the bowl with plastic wrap and refrigerate for at least 1 hour. When ready, allow the meat to sit in room temperature for 15 minutes before cooking on the grill. Cook for 5 minutes per side over medium-high heat until cooked through or to desired doneness. Allow to rest for 10 minutes before slicing. Serve with your favorite sides.
